Description
The landscape of culinary arts education is rapidly changing, and post-secondary institutions must innovate and adapt to maintain relevancy. The purpose of this project was to develop a proposal for a Bachelor of Science in Food Sustainability offered by Johnson & Wales University. The proposal is framed by a literature review, which reveals best practices in sustainability education as well as common barriers to the development and implementation of sustainability curricula in post-secondary institutions. The review also evaluates ways in which sustainability is incorporated into the curricula of existing culinary arts programs in the United States. The proposal includes a curriculum outline, programmatic outcomes, course sequencing, and an outcomes assessment matrix. Anticipated resources necessary for the implementation of the proposed program, program capacity, anticipated impacts on accreditation, and a timeline for program implementation are also considered.
